Tom Yum Goong Recipe

Tom Yum Goong is a well known Thailand Traditional Cuisine. Being considerate as one that defines Thai flavour. This dish must be served both hot and sour to maximize its refreshing and delicious taste.

Ingredients:

  1. 20 prawns (shrimp), medium size
  2. 4-5 chicken broth/soup stock
  3. 2 stalks of fresh lemongrass, lightly pounded, cut it into 1 inch long
  4. 4 tablespoons of fish sauce
  5. 1/3 cup sliced fresh galangal
  6. 1/2 cup straw mushroom or local fresh mushroom (you can create your own variation of mushrooms), halved it
  7. 6-8 lime leaves, shredded
  8. 2 green onions, sliced
  9. 4 tablespoons of lime juice
  10. 6 Crushed chili or chili pepper  (you also can variate this one)
  11. 2 tablespoon of  nam prik pao (Roasted chili paste or chili paste in oil), some may say chili jam or roasted chili jam
  12. Fresh cilantro for the garnish as you pleased

How to cook:

  1. Wash the prawns and un-skin them, but leave the tail. also bring the chicken to boil
  2. Add lemongrass, galangal, and lime leaves, boil them awhile together with the chicken, then add mushrooms (note that lemon grass and lime leaves is for flavour only, and should be avoided when eating the soup)
  3. Add the fish sauce, prik pao, green onions, and lime juice to the boil until it smells fragrant (5 minutes)
  4. You have to balance the sweet, sour and salty taste together, therefore add related ingredients to adjust it well together
  5. Add the prawns, and fresh chili peppers, as soon the prawn turn pink (well cooked), served it with the garnish with the cilantro
